Coconut Sap Vinegar Production

  • Sap Collection: Collect fresh sap from coconut inflorescence by tapping.
  • Natural Fermentation: Allow sap to ferment naturally in a covered container for 60 days.
  • Pasteurization: Heat sap to 60-65°C for 5-10 minutes to kill contaminants.
  • Cooling & Bottling: Cool pasteurized sap before transferring to sterile bottles.
  • Aging: Allow vinegar to age for one year, resulting in color change from cloudy white to light brown.

Storage

Once open keep the product in an airtight container in cool and dry place.

Shelf Life

It has a shelf life of 18 months.
