  • Dehusking: Remove outer husk.
  • Deshelling: Extract kernel without breaking.
  • Paring: Remove brown skin carefully.
  • Blanching: Dip in hot water with potassium metabisulphite.
  • Draining: Remove excess water.
  • Slicing: Cut into thin slices.
  • Osmotic Dehydration: Soak in sugar solution with essence and salt.
  • Drying: Dry at 70-80°C, turning after one hour for even drying.
  • Toasting (Optional): Increase temperature to 90°C for toasted flavor.
  • Cooling: Allow chips to cool before packaging.

Storage

Store in a cool, dry place for up to 3 months if not refrigerated. If refrigerated, shelf life is up to 6 months.
